Ingredients:
3 tablespoons/45 ml extra virgin olive oil
6 pounds/3 kg yams, peeled and cut crosswise into 2-inch/5-cm triangular pieces
Salt and freshly ground black pepper
Method:
Preheat the oven to 400°F/205°C. Place a large roasting pan in the oven for 10 minutes or until it is very hot. Using oven mitts, remove the pan from oven and drizzle with the extra virgin olive oil.
Place the yams in the roasting pan and toss to coat with the oil. Sprinkle the yams with salt and pepper. Return the pan to the oven and roast the yams for 45 minutes, turning them after the first 25 minutes, or until they are tender and golden.
